French Toast (with bananas)

What you need: 

3 cups sliced bananas (about 2 large)
2/3-1 cup soy milk
1 1/2 teaspoons cinnamon
3/4 teaspoon vanilla
12 slices bread
oil for cooking in
maple syrup

What you do: 

Blend together bananas, soymilk, cinnamon, and vanilla. Pour into a pie plate, dip slices of vegan bread into batter. Fry in a non-stick skillet until slightly golden, be sure to use plenty of oil or else it will stick to the pan (ugh!)
Serve with maple syrup

Only thing I did differently was using chocolate soy milk instead of plain..

It came out amazing, and tastes pretty much like banana bread lol

I've tried a lot of french toast recipes and this one is the winner for me. The bread didn't get soggy, it coated the bread super well and it tasted great. Thanks for posting the recipe!  ;)b

I used a touch of whole flour to thicken it up (although I'm not sure it needed it) and home-made strawberry jam, then I served it with blueberries and mango.

Love the banana flavor!

I will definitely try this. Love bananas.

One helpful tip would be to use french bread or your favorite vegan loaf. thick(ish) slices and let it sit out overnight to stale. That is what french toast was originally made with. You can prop up your clean oven racks or use cooling racks to lay out the bread to harden.

I cook the French Toast on the lowest setting on my griddle, between 200-225 degrees, and it turns out a lot better.  My family loves this recipe and they don't ever want me to make them "Regular" French Toast again.

This recipe was really delicious! I served it with blueberries and confectioners sugar. I am certain that apples would be a perfect substitute for banana, and an excellent favorite.
