Baked French Toast

What you need: 

1/3 cup EnerG egg replacer (powdered egg replacer)
1 cup soy milk
1/2 table spoons apple sauce
1 teaspoon cinnamon
1 teaspoon vanilla
4 slices of bread (cinnamon raisin or other nutty fruity breads is awesome)
oil to grease pan
1 baking dish 7 x 11 or similar size
aluminum foil to cover dish
favorite syrup or other pancake topping for serving

What you do: 

Preheat oven to 350˚F. Grease baking dish with oil.
Mix EnerG, soy milk, apple sauce, vanilla, & cinnamon in a small bowl with a hand mixer set to low.
Dip bread in mixture to coat. Lay out in greased pan (bread slices should either lay flat to fill the dish from edge to edge or slightly overlap).
Pour remaining "egg" mixture over slices and cover with foil.**
Bake for 20 min, remove foil, bake 5 more min or until dry.
Serve with vegan butter and your favorite syrup.
