Walnut-Crusted French Toast

What you need: 

1 cup nondairy milk (I use soy)
1 1/2 tablespoons nutritional yeast
1 1/2 tablespoons whole wheat flour
1 tablespoon sugar
1/2 teaspoon salt
1 1/2 teaspoons cinnamon
1/2 cup walnuts, ground, divided
6-8 slices bread
oil, as needed

What you do: 

1. Pour milk into a wide, shallow bowl. Add the nutritional yeast, flour, sugar, and salt and whisk. Add the cinnamon and give the mixture a few more stirs.
2. In a separate shallow bowl or plate, spread out about 1/2 the ground walnuts to dip the bread in before cooking. I ground my walnuts up in an old coffee grinder, and it worked perfectly! I left some pieces bigger to make the consistency more interesting.
3. Toast bread, dunk 1 slice into the milk mixture. Let sit for 30 seconds to 1 minute (depending on how thick your bread is) to soak up more of the mixture. Flip, and let the other side soak for 30 seconds.
4. Transfer to the plate of ground walnuts and flip so that each side gets partially coated (refill walnuts as they get used up).
5. Heat a little oil in a frying pan or skillet on medium-high heat. Place as many slices as will fit, and cook until slightly browned, probably 2-3 minutes. Flip, and cook the second side.
I had mine plain, but I'm sure it'd be great with some vegan margarine and maple syrup. Another favorite is giving some frozen berries a quick zap in the microwave to make a berry syrup, yum! Other nuts, or toppings like shredded coconut would probably work great in place of walnuts. Or, the nuts can be left out all together to make regular French toast. Enjoy!
