Easy Carob Brownies

What you need: 

2 tablespoons water
1 tablespoon ground flax seeds
1/2 cup canola oil
1/4 cup nondairy milk (I use almond)
3/4 cup sugar
1/4 cup maple syrup
1 tablespoon molasses
1/2 teaspoon vanilla extract
1 cup unbleached flour, sifted
1/2 cup carob flour, sifted
1 1/4 teaspoons baking powder
dash salt

What you do: 

1. Preheat oven to 350 degrees F. Grease 8 X 8" pan, set aside. Whisk water and ground flax seeds in a small bowl, set aside.
2. Cream canola oil, milk, sugar, maple syrup, molasses, and vanilla extract together in a separate bowl.
3. Mix remaining ingredients (the dry) in a separate bowl. Combine flax seed/water mixture with wet ingredients. Add wet ingredients to dry ingredients, mix well.
4. Spread batter into prepared pan and bake for 25 minutes or until a toothpick comes clean when poking the center. Allow to cool.

SO HOW'D IT GO?

This recipe was straightforward and pretty great as an outline! I made a few substitutions (coconut milk for milk, brown sugar for sugar, agave for maple syrup); increased the vanilla and carob a little; and added vegan white chocolate chips. I took them out at 30 minutes and they were perfect, just a wee but soft in the middle, but the consistency was nice and creamy. Will definitely be making again!

MMMMMMMM! They are absolutely delicious! The only things I changed were agave instead of maple, coconut instead of almond milk, and peppermint extract instead of vanilla. Peppermint brownies! Hooray! Just fyi tho, they are pretty cakey/crumbly, maybe I cooked them too long, or that's just the way they are. :)
