Delish Zucchini Pancakes

What you need: 

1 medium organic zucchini

1 organic green onion, chopped

1/4 to 1/2 cup. brown rice flour (i use Bob's Red Mill Gluten Free)

2 eggs (i use Ener-G)

1 tsp. baking powder (i use gluten free)

sea salt to taste

Earth Balance for frying

What you do: 

Heat Earth Balance in a frying pan (i like my pancakes crispy so i use about  2 tsps for every 2 pancakes i fry). Shred zucchini, skin and all, into a bowl. Add chopped onion, egg replacer, brown rice flour, baking powder, and salt. Stir well. Mixture will be quite wet. You can add more flour if you feel it's too wet for your taste. Drop by spoonfuls onto heated pan and fry. Add more Earth Balance if ness. Fry until each side is nice and brown and crispy. Eat while hot, although cold leftovers are yummy too!
