Corny Zucchini

What you need: 

1/2 pound tofu
2 tablespoons tamari
1/4 cup water
salt and pepper, to taste
2 cups tortilla chips, finely crushed
2 medium zucchini, sliced 1/2" thick
olive oil, for frying

What you do: 

1. Blend tofu with tamari and water until smooth. Pour onto a plate. Add salt and pepper to crushed chips on plate.
2. Spread tofu mixture thinly on either side of zucchini slices.
3. Coat thoroughly with tortilla chip mixture and fry on both sides in olive oil on medium high heat until crispy on outside and tender on inside.
This is a wonderful alternative to the eggs in the old-fashioned breaded zucchini recipe. Great for egg-free and wheat-free diets, and tastes just as good!
