Cranberry-Orange Bread
2 cups all-purpose flour
1 cup sugar
1/2 teaspoon salt
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 cup cranberries (fresh or frozen)
1/2 cup walnuts, chopped, optional
2 tablespoons vegetable oil
1/2 cup unsweetened orange juice
1/2 tablespoon orange zest
1 egg replacer (I use Ener-G Egg Replacer)
1. Preheat oven to 375 degrees F. Grease and flour loaf pan. In a large bowl, mix dry ingredients (flour, vegan sugar, salt, baking powder and baking soda).
2. In a small bowl, add walnuts, cranberries and 1/2 cup of dry mixture to coat the nuts and berries.
3. In a measuring cup, add oil and add hot water to make 3/4 cup. In a medium bowl, mix oil/water mixture, orange juice, orange zest and Ener-G Egg Replacer.
4. Combine liquid mixture to dry mixture (don't overmix!). Fold in nuts and berries. Bake for 1 hour.
I gave this bread away as Christmas presents last year and it got rave reviews!

For icing I used: 1 can coconut milk, 3/4 cup powdered sugar, 1/4 cup orange juice
For egg I used: 1 tbsp apple cider vinegar, 1 tsp baking soda
Thank you for this recipe! I love this bread; I make it year-round for a breakfast bread. My modifications are all whole wheat, 3/4 cup sugar, at least 1Tbs orange zest and flax as the 'egg'. I use a wee bit more water because of the WW and it comes out yummy and gorgeous every time. Thanks again!
Made this with dried cranberries for Christmas brunch. It was a huge hit, absolutely delicious! :)
Good news to the busy/lazy: this recipe is absolutely bread machine compatible. Also, I did not like the idea of using this many bowls (also kitchen not very big), and since the dry ingredients need to be added gradually to the wet mixture, I simply added the cranberries and walnut to the last one third of the dry mixture, rather than creating an extra bowl just for mixing part of the flour with the berries/nuts.
Yum! Made this at Christmas, it was a big hit! I put extra orange zest in it.

I didn't have fresh or frozen cranberries so i used a pack of dried cranberries that i for some odd reason had in the back of the pantry?
But it still turned out amazingly. Even the carnivore family loved it.

My mom makes cranberry bread every year, and since I went vegan, its one of the things I've missed the most. This recipe comes pretty darn close! I finished off a loaf by myself in a few days! I omitted the orange zest and walnuts. I also skipped the step with added some of the dry mixture to the berries, I don't think its really needed. I baked for 1 hour, and I might reduce a bit next time, as the outside was a bit crunchy (was fine after it cooled and sat for a day). Thanks!
ktkimmle: I've made this with dried cranberries and it was great. I let them soak in hot water for a few minutes to plump them up first, but you don't have to do that if you're in a rush.

Has anyone made this with dried cranberries? I can't find frozen or fresh here, only dried.
