Colorful Spicy Quinoa

What you need: 

1 onion, chopped
3 cloves garlic, chopped
1T olive oil
1/2 tablespoon chana masala
1/2 tablespoon coriander powder
1 cup quinoa
1 cup vegetable broth
1/2 cup water
1 tomato, chopped
frozen green beans, chopped
frozen corn
herbs such as rosemary and parsley
1/2 teaspoon salt
½ teaspoon black pepper

What you do: 

Saute the onions and garlic in oil over medium heat until the onions start to brown. Add spices, stir. Reduce heat to simmer for one minute, then turn off.
In a pot, add quinoa, vegetable broth, water tomato, onion/garlic mix, green beans and corn and turn to high heat until water starts to boil.
Reduce to medium heat, add the rosemary, parsley, salt and pepper and stir. Then cook covered until liquid is absorbed (about 25 minutes), checking periodically.

SO HOW'D IT GO?

I thought this was very tasty.  I had didn't have Chana Masala, so I used Garam Masala and added a bit of nutmeg and ginger.  I also used fresh green beans.  I added them when the recipe said to, but next time, I might add them in the last 10-12 minutes for a bit of crunch.  All in all, it had a really good flavor and texture.
