Quinoa and Spinach

What you need: 

1 cup quinoa
package of fresh spinach
2 ripe tomatoes
lemon juice
sesame oil

What you do: 

I like to keep this favorite of mine as simple as possible.
Simply cook the quinoa according to the directions, adding a little sea salt if desired. Then serve over the spinach, adding the diced tomatoes on top.
Pour on lemon juice and sesame oil.
