Classic Rice Crispy Treats

What you need: 

1 cup light corn syrup
3/4 cup sugar
1 tablespoon vegan margarine (I use Earth Balance)
1/2 teaspoon vanilla extract
6 cups puffed rice cereal, divided

What you do: 

1. Begin by heating the syrup in a small pot over medium heat, then add the sugar to the pot. Stir continuously for a few minutes; you might start to notice it bubbling at the bottom. If it starts to become frothy, turn down the temperature some.
2. When it starts to look like it's boiling, add the margarine. Stir until evenly mixed, then add the vanilla, still stirring. If you notice that the syrup/sugar mixture does not boil, you can turn up the heat.
3. Meanwhile, in a very large bowl, measure out about 5 cups cereal. Pour the heated mixture over the cereal. Stir all ingredients with a heat resistant spatula making sure to evenly combine.
4. You might want to add the remaining cup or more of the cereal, depending on the amount of saturation you're looking for (I find about 6 cups cereal allows all the cereal to be covered in syrup but not too gooey; still crispy.) Lay out a 9x13" piece of wax paper, and lightly spray with oil.
5. When mixture is stirred to satisfaction, pour the cereal on to the wax paper, using the spatula to push it into a large rectangle, approximately 1" or so thick. Allow the rice crispies to cool until hard, about an hour or so (although sampling of a chunk of warm rice crispies is possible for instant gratification!)

SO HOW'D IT GO?

I made these using brown rice syrup instead of corn syrup, and while they tasted "healthy" it was in a good way!  I would definitely make them again.

i've never tried with maple syrup but i don't think it would work. corn syrup is a lot thicker than maple syrup. plus without the added sugar the mix would end up a lot wetter and not as thick and sticky.

Thank you for the advice. I am still looking for a way around it though, haha. What if I added corn starch or arrowroot to the syrup and heated it first? Hmmm...I guess I'll have to do some experimenting with this. I just don't want to buy corn syrup cos I never use it for anything, but I have an adbundance of maple. hehe.

would this work if I just used maple syrup instead of corn syrup and didn't add sugar? I def. don't mind the maple taste, I  :)>>> maple syrup. I miss me some rice krispy treats! *drool*

I liked these except they are too sweet.  I missed rice crispy treats, and was happy when i tried one... but a little sad because they were sweeter than I like.    Is it ok to put less sugar, or will it not be as gooey that way?  Is rice syrup less sweet than corn syrup?  If anyone has any suggestions let me know!  I will try a little less sugar next time!  And maybe a little more cereal.

These were pretty good they don't taste too much like real rice crispies but they taste good. I used rice syrup instead of corn syrup  halved the recipe but used the same amount of margarine i also added chocolate chips mmmmm i'll deff. make this again! I want to try it with nuts mixed in and peanut butter on top!

So, I didn't have a full cup of corn syrup, which I thought. "good, it seems people keep saying it calls for too much anyway..."  and I didn't have a full 3/4 cup sugar- probably closer to 1/2 cup.  But, these were remarkable!!  I used a metal spoon to mash the crispies into the pan so they would stick together better.  But, again, these were fantastic!!!

Don't eat these warm or they are not tasty. You have to wait for them to completely COOL :)  They were really good! Thanks for the recipe!

I crafted a recipe pretty close to this one, shortly after I turned vegan--about 12 years ago.  I love Krispie Squares and was determined to have them again.  Vegan marshmallows aren't available where I live.

Anyway-- my recipe had less sugar, a little more margarine and, I think the important part, I used 3/4 teaspoon of powdered agar agar.  This gives it the chewy, stringy quality of the real thing.

As well, one can make this gluten-free by using Nature's Path gluten free rice crisps and gluten free vanilla.

Experiment with the quantities of all the ingredients until you find the way you remember the real thing.

i just made these and put some peanut butter on top.  It makes it less sweet and extra tasty.  next time i'll add peanut butter to the corn syrup mixture.  I highly recommend it!
