Cauliflower Soup

What you need: 

1 head cauliflower
1 onion
2 carrots
2 leaves spinach
water
salt and pepper to taste

What you do: 

Cut cauliflower into flowerets. Add cauliflower and remaining vegetables to pot. Add enough water to only cover vegetables in pot. Bring to boil and continue boiling until all are very tender, usually about 15 minutes. Drain, reserving cooking water. Put vegetables in blender and blend until smooth adding more cooking water as needed for desired consistency. Add salt and pepper to taste.
Soup has milky consistancy without the milk!

SO HOW'D IT GO?

While the soup looks like the picture, it is lacking in flavor. It would have been great with some kind of herb combo to go in at some point. I added an entire extra onion and a few cloves of garlic, then some vegan chicken broth base, salt, and pepper, and I still don't like it... :/

I'm sorry, but I didn't like it at all. It had very strange smell and taste :-( I didn't even have desire to eat it :-(

I had a massive cauliflower head from my garden that need to be used.  This recipe was a great base to play with.  I added gram marsala powder, curry, cilantro, a couple garlic cloves and some peas to add some color.  I pureed most of it, but left some chunks of carrot and cauliflower.  Warming and really filling.

So, I don't (and may not) have a picture of this b/c my camera is charging.....but it was really great! I was quite surprised. I sauteed the onion
first, then added the cauliflower and some garlic, then the carrots and water, and seasoned with lots of s and p. I pureed some of it, then added some leftover steamed kale, and pureed all of it. I ended up adding more s and p b/c the carrots made the soup sweet! I warmed it w/ a bit more water.  ;)b

oh also I would make sure your cauliflower/carrot ratio is good. I had a smaller cauliflower and 2 HUGE carrots and I think next time I will do a bigger flower with maybe 1 1/2 carrots. Still good just tastes more of carrots

it's very different not like anything I've had before but its great! A nice soup ready in 20ish min for me. But only 5 min prep. So simple and a great flavor. I will be making this again! oh and I opted to nix the spinach but just because I was to lazy to buy some.
