Veggie Soup

What you need: 

1 carton vegetable stock (give or take some - you can use water instead)
4 garlic cloves, chopped
1 large sweet onion
1 large carrot stick
1 celery stick
1 can diced tomatoes (preferrable fire-roasted)
1 can red kidney beans, drained and rinsed
3/4 cup each fresh or frozen okra, frozen peas, and frozen corn
1 cup chopped mushrooms (white or baby bella)
2 bay leaves and cayenne, paprika, oregano, salt, pepper to taste
1 zucchini
1/2 cup black eyed peas
handful chopped green beans
3/4 cup barley (you can also use quinoa)

What you do: 

Boil the vegetable stock. While that is boiling chop up the veggies. First add the garlic and onions, then the other fresh veggies and barley. Add the bay leaves, kidney beans, and dices tomatoes. Then add the frozen vegetables and spices. Let it simmer for as long as you can wait!

SO HOW'D IT GO?

Thanks for the great recipe!  I used a can of crushed tomatoes, frozen lima beans instead of okra and frozen black eyed peas.  It was delicious!
