Carrot and Coconut Dahl
What you need:
1 1/2 cup red lentils
4 carrots, grated
1 400ml can coconut milk (14oz?)
1 cup water
3-4 cloves garlic, crushed
1 tablespoon grated ginger
1 teaspoon garam masala
1 teaspoon ground cumin
salt, to taste
rice, for serving
What you do:
Wash lentils and put in a large microwave-safe dish or in a pot. Stir in rest of ingredients. Microwave 15 minutes, stirring occasionally, until lentils fall apart OR simmer on the stove until lentils fall apart. Serve over rice.

I like the idea of incorporating grated carrot with the lentils and will give it a go when next craving for Indian food takes a hold!
This recipe is nothing special. Unless you really want to gain weight.
