1 1/2 cup red lentils
4 carrots, grated
1 400ml can coconut milk (14oz?)
1 cup water
3-4 cloves garlic, crushed
1 tablespoon grated ginger
1 teaspoon garam masala
1 teaspoon ground cumin
salt, to taste
rice, for serving
Wash lentils and put in a large microwave-safe dish or in a pot. Stir in rest of ingredients. Microwave 15 minutes, stirring occasionally, until lentils fall apart OR simmer on the stove until lentils fall apart. Serve over rice.
