Banana Nut Bread Bowl (Creamy)

What you need: 

1/4 cup steel cut oats (they have a much better texture than rolled)
2/3 cup almond milk (or any other non-dairy milk, I use unsweetened)
1/3 cup water
1/2 banana (what you do with the other half is up to you, use it as a topping, maybe?)
1 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
2 tablespoons walnuts

What you do: 

1. In a bowl, combine steel cut oats, milk, and water. Put that bowl in a slow cooker to cook for 8 hours on LOW (I do this right before bed, so it's ready for me in the morning).
2. Transfer to a blender. Add the banana, vanilla, and cinnamon. Blend until smooth and really creamy.
3. Pour this mixture back into your bowl and top off with the walnuts. If you want, slice up your other half banana and use it as a topping!
Oh yeah, eat and enjoy your pastry in a bowl!
This breakfast is EXTREMELY healthy, and will keep you full until lunch. You get energy and lots of vitamins/minerals from the banana, iron and B-vitamins + fiber from the oats, calcium if you're using enriched non-dairy milk, and omega - 3 fatty acids + more minerals from the walnuts. I'm sure this would also be great with other nuts, or even blueberries to make it blueberry banana nut bread (coconut, anyone?)
You can make endless variations with this blender trick.
Source of recipe: Someone from one of the blogs I read liked to blend her oatmeal, and I thought it was great when I tried it. Eventually, experimentation led to this amazing breakfast!

SO HOW'D IT GO?

i've made this twice now, quadrupling the recipe to feed my husband and i during the week. the recipe itself is fantastic! i blend the banana into my almond milk before cooking so i don't need to add any sugars, and i add raisins and ground flax before serving. my only issue is that 8 hours on low leads to burning in my crock, 4 hours seems to be plenty of time.

did you use a full size, or mini slow cooker?
