1/4 cup steel cut oats (they have a much better texture than rolled)
2/3 cup almond milk (or any other non-dairy milk, I use unsweetened)
1/3 cup water
1/2 banana (what you do with the other half is up to you, use it as a topping, maybe?)
1 teaspoon pure vanilla extract
1/2 teaspoon cinnamon
2 tablespoons walnuts
1. In a bowl, combine steel cut oats, milk, and water. Put that bowl in a slow cooker to cook for 8 hours on LOW (I do this right before bed, so it's ready for me in the morning).
2. Transfer to a blender. Add the banana, vanilla, and cinnamon. Blend until smooth and really creamy.
3. Pour this mixture back into your bowl and top off with the walnuts. If you want, slice up your other half banana and use it as a topping!
Oh yeah, eat and enjoy your pastry in a bowl!
This breakfast is EXTREMELY healthy, and will keep you full until lunch. You get energy and lots of vitamins/minerals from the banana, iron and B-vitamins + fiber from the oats, calcium if you're using enriched non-dairy milk, and omega - 3 fatty acids + more minerals from the walnuts. I'm sure this would also be great with other nuts, or even blueberries to make it blueberry banana nut bread (coconut, anyone?)
