Hi, I've been an ovo-lacto vegetarian for 18 years, but I've never been a great cook. I'm going to challenge myself to make a dish everyday this summer. Right now I need a dish that will serve as a cold main dish for some kids next Saturday who are serious meat-eaters. They pulled all the veggies off the veggie pizza I bought them last month. Their mother has already said she's bringing hot dogs as backup, but I'd love to have a "wow" dish for them. Maybe something that I could even remind them afterward that it didn't have meat, after they loved it. Ideas are appreciated?

My kids love gaspacho, a cold tomato soup. I've also served a 7 layer bean dip before that was a big hit with kids.

Thanks much. I think the kids would like both of those, but I don't think it would keep them yelling for the hot dogs or hamburgers. I may give up and just bring the appetizer and let them eat meat.

Kids can be very picky and highly influenced from their parents or peers to be biased, so its very tricky.  I think you could make anything from Falafel with veggies to dip into hummus to veggie sushi with edamame and dumplings on the side to basic wrap sandwiches full of delisiousness and they would still turn up their noses if they have been programed to.  Good luck!

Also, if she's bringing hot dogs... what about getting veggie dogs and making a cornmeal crust and making her kids some corn dogs! They won't be able to taste the difference and corn dogs are way more awesome than just a plain old hot dog. That, along with a delicious potato salad (http://vegweb.com/index.php?board=405.0) or some french fries (or baked fries!) would be the perfect kid pleasing meal!
