Advice needed

I have never posted on vegweb before so forgive me if I don't use proper form.  

I need some advice.  My family (dd, bf, dad & I) are going to a cabin in July for my birthday.  We will be there 2 full days and one half day.  I was wondering if anybody had any recipes to share.  I would love to grill out most of the time.  Thanks for any help.

Foilpacks are a great camping meal that my family has used many times. You simply lay out a piece of foil, fill it with veggies, add a bit of oil or vegan butter and seasonings, fold the foild into a neat packet and put the entire foilpack on the grill or over the campfire. It's delicious, quick, and easy to cleanup afterwards. The best part is that you can do the foilpacks individually, so everyone can choose what to add or leave out of their own pack. Some Veggies that we've used before are potato, onion, bell pepper, mushroom, grape or cherry tomatoes, corn, green beans, and sugar snap peas, but you can be creative!

If you are having to transport food, it's probably best to keep it simple - nothing elaborate with a lot of ingredients or spices that you may not have on hand, or would have to buy.  Some of my favorite grilled recipes are:

    * vegetable fajitas/tacos (grilled peppers, mushrooms, onions, zucchini) serve with tortillas, guacamole, and chopped lettuce and tomatoes.
    * grilled veggie burgers/dogs
    * grilled portobella mushrooms
    * tofu brushed with BBQ sauce
    * Pretty much any vegetable is great grilled... asparagus, corn, zucchini, etc.
    * Fruits, too!

If possible, perhaps you could make a few cold dishes in advance to take with you.  Like potato, pasta, or rice salad.  These can serve as easy side dishes with almost any meal.

Marinate those portabellas in some olive oil, soy sauce, garlic, balsamic vinegar and enjoy.

I'm a big fan of homemade granola and granola bars. There are recipes on VW. They're great for hiking.

Also, I take hummus/carrots with me everywhere. It's a great, filling snack, and it's a meal if you need it to be.

Throw some beans into those delicious foilpacks that anave suggested. That sounds really yummy!

I would go with everything Fuzzy suggests. Yum! It's enough to make me want to go camping.

Thanks for all the great suggestions.  I am getting really excited for the trip!!  I guess I am just worrying too much about making sure my "meat and potatoes" dad gets food he likes and will eat without having any meat.  But I never leave the table unsatisfied so he probably wont either.  Keep the suggestions coming they have been great help planning this trip as well as a few other trips coming up.
