Cornmeal Blueberry Pancakes

What you need: 

1 cup flour
1 1/2 cups cornmeal
3 tablespoons sugar
2 teaspoons baking powder
2 tablespoons vegetable oil
2 1/2 teaspoons corn starch dissolved in 4 tablespoons water
2 1/2 cups plain soymilk
3 tablespoons vinegar
blueberries (i don't know how blueberry-y you like things)--frozen ones (thawed) work fine

What you do: 

1. Put the vinegar in the soymilk and allow it to curdle. This makes it "butter(soy)milk". 2. Dump all the dry ingredients together and mix them up with a whisk. 3. Add the oil to the dry things. now dump in the buttermilk stuff. 4. Mix it all up. 5. Now put however many blueberries you want in that and mix it up. i like about 3/4 cup. Heat a skillet/pan with some fake buttah in it and pour the mixture in ladle by ladle (1/4 cup works too). When it bubbles, flip it. Cook until golden. Serve topped with maple syrup or as i like with some vegan buttah and powdered sugar.
Source of recipe: I like pancakes and blueberries and cornbready things. So I made these one day.

SO HOW'D IT GO?

I made these today for brunch. They were great. I added 1/2 cup applesauce, 1/2 cup ground flax, 1/2 cup sugar, 1tsp cinn., tsp vanilla, and ommitted the cornstarch. My family loved them. I also added a can of mixed in juice (fruit drained) since I didnt have any blueberries. I didnt use the oil in the recipe but used earth balance in the pan thanx for a great recipe:)

I omitted the cornstarch and water, and these came out great. Fluffy and delicious. I loved them. 5 stars.

These were extremely good. I found the batter a bit thin so I added an extra 1/2c of flour, and they were perfect.

I served them with a blueberry syrup I whipped up with the extra blueberries and my mom loved them (she normally hates pancakes)!
