Fiberfull Cookies
1/2 cup flour
2 tablespoons canola oil
1 tablespoon applesauce
1 cup rolled oats
1/4 cup raisins (or chocolate chips, nuts of your choice)
1 teaspoon baking soda
1/4 cup sugar
soy milk
pinch of salt
1 tablespoon ground flaxseed
2 tablespoons wheat bran
Preheat oven to 350 F. Combine sugar and oil and applesauce in one bowl. Then combine flour, salt, baking soda, oats, flaxseed, and wheat bran in another bowl.
Combine both mixtures. Add just enough soy milk to get a cookie dough consistency. (It'll be fairly sticky though.) DO NOT go overboard with the milk as the results will be cake-like. Add in raisins.
Flatten out spoonfuls (I like to make mine very flat and crunchy) onto a lightly oiled cookie sheet and bake for 10-15 minutes (depends on the oven).

I really can't get enough of these cookies! :)>>> I used to be addicted to store-bought granola bars but these have replaced them (and they're probably healthier too, and I'm not throwing away all those wrappers anymore).
When I'm bored I put all the dry ingredients in jars (1 batch per jar) with various dried fruits/nuts/seeds/chocolate chips so I always have 3-4 mixes on hand when I need them. I actually get a bit nervous when I don't have mixes made up. Speaking of which, I made my last premixed batch this morning so I'd better go make some more mixes.
I love how these aren't too sweet.
I subbed chopped dried apricots for the raisins, added about 1 tsp of "mixed spice" (premixed cinnamon, cloves and nutmeg), and 1/2 tsp of vanilla extract. I also subbed water for the soymilk, I used a bit less than 1/4 cup and the cookies are a bit cake-like, so I'd recommend starting with 1 Tbsp and work up from there. Oh yeah, and I accidentally switched the measurements for the oil and applesauce, that might be why they're cakey. Still good though. =)
