1/2 cup flour
2 tablespoons canola oil
1 tablespoon applesauce
1 cup rolled oats
1/4 cup raisins (or chocolate chips, nuts of your choice)
1 teaspoon baking soda
1/4 cup sugar
soy milk
pinch of salt
1 tablespoon ground flaxseed
2 tablespoons wheat bran
Preheat oven to 350 F. Combine sugar and oil and applesauce in one bowl. Then combine flour, salt, baking soda, oats, flaxseed, and wheat bran in another bowl.
Combine both mixtures. Add just enough soy milk to get a cookie dough consistency. (It'll be fairly sticky though.) DO NOT go overboard with the milk as the results will be cake-like. Add in raisins.
Flatten out spoonfuls (I like to make mine very flat and crunchy) onto a lightly oiled cookie sheet and bake for 10-15 minutes (depends on the oven).
