I just had one of those shocking, heartbreaking revelation moments. In trying to go vegan (mostly) I'd thought about Thanksgiving, and Christmas, and decided I could live with vegan food on those holidays. But OMG.... No corned beef on St. Patricks Day? This will take some getting used to.
I feel your pain! I have yet to find a substitute so I usually just make myself cabbage and potatoes. You can still have soda bread too (as long as it's vegan of course).
you can really make so many great substitutes with vegan food you'll find you don't really miss a thing.
Luckily, I have time to get used to the idea. But oh, how it hit my heart when I realized it this morning!
There's a super delicious corned beef in Vegan on the Cheap. It makes great reubens, too.
Ooooooh! That book is number one on my Amazon wish list. I have NO vegan cookbooks; just VegWeb. Which is nothing to shake a stick at!
Welcome Cherizac! I am sure that by the 2011 St. Patricks day you will have found a lovely subsitute.
For me, that is one dish I cant make because my husband hates corned beef and hes omni. So a faux version wouldn't go over well. Oh well, cabbage and potatoes will have to do for me.
I have a lot of cookbooks but never use them, I just use vegweb.
I made this for St. Patty's day this year:
Fat Free Vegan's corned beef
I modified the recipe slightly to make it corned beef hash - basically boiled potatoes in the broth before adding the "beef," then drained the potatoes and beef (reserving the broth - it's good for use in another meal), and fried everything in olive oil. It works well with either steak strips or burger crumbles. I've never had the real thing, but DH said this was very close to what he remembered and that the burger crumbles were more authentic for the texture of corned beef hash.

Ya whatever dish you want to veganize, vegweb peeps are full of ideas! Seriously. Just ask and you will usually be flooded with responses and recipe ideas... Vegans don't miss out on a damn thing!

I have Vegan alternatives that I love every bit as much as I used to love the traditional meals. If all else fails I tell myself, don't live to eat--eat to live. I've grown to dislike most animal products and I now prefer the vegan diet. I feel better physically and mentally when I stick to a strict vegan diet. I need less coffee in the morning and my mood is more on the positive side than it was during my prior life. I'm even sleeping better... IMHO, the key is to give it some time and seek vegan dishes you enjoy. ( I don't know how I ever lived without curry :))
Glad I missed that tradition, growing up in a German/Texan household....corned beef is vile icky poo yuck gross.
Anyway, just wanted to say Hi! Nice to meet you. Most of us have things we miss. For me it's pizza. But I don't spend a lot of energy recreating things I love since there are so many awesome new things to try.

I really like what Tweety said too... there are a few things I miss (decreasingly every day) from being an omni but there are WAY more things I love about being vegan.

I would take it one day at a time. When i first transitioned I remeber thinking, I can NEVER have wedding cake at weddings or birthday cake, or CHEESE PIZZA!! And it was overwhelming to think like that. After time my taste buds didn't need those things anymore, and (like drugs,) the "sting" for them got less and less noticeable. Making alternatives and starting new traditions for holidays, (which seems to be a lot of the ties to those foods,) will help. Remebering to take it one day at a time, by the time those holidays roll around you will feel much different than you do now.
