Hi from Kuwait

I'm Vegan with latent lactose free tendencies. (I use 50 grams of lactose free whey protein a day. Don't tell anyone!) I must say, that locals here in the big sand box generally have no understanding or tolerance for veg but with a large communities of folks from India, the ingredients are obtainable. Once in a while I'll actually find an Indian restaurant with the universal abbreviation "Veg" posted in the window. All in all, the lifestyle is doable in the midst of all these meat eaters.
I do believe I will enjoy trying some of the recipes posted on this site. From what I read, the crowd seems very mature and upbeat. I can't wait to dig a little deeper and broaden my menu. Thanks for being here!

Wow Kuwait -and I though it was tough to be a veg*n in the Yucatan! There are tons of fantastic recipes here, doable even with limited available ingredients.
You're in a fascinating archaeological region...any chance to explore any of the historical sites or are things too unstable?

Mexico is probably my favorite place on the planet. I've ridden motorcycles all over Mexico with a total of well over 20k miles. I especially love all the fresh fruits and veggies. With that said, I don't imagine you eat out that often. In my experience, they don't eat as much meat at a sitting but meat is ever present.
There's not much here in Kuwait besides a very large beach that extends from the shore of the Gulf all the way to the Red Sea. If you ever plan to visit, I'd block in 3 days and call it good. BTW, Kuwaitis make Mexican driver's appear relatively sane.

One of my favorite:
Two cups of chick peas. (Pressure cooked from dry.)
Medium onion
splash of olive oil
Tomato paste (or fresh tomato thrown in the blender.)
Whatever fresh veggie I can find or canned veggies
Curry powder to taste (Each brand requires a different amount.)
Saute onions to a light brown color
Add chick peas, veggies, curry, and enough water to create a fairly runny gravy
Simmer until impatience sets in
Serve over a bed of brown rice
On days when I have little time, and my mother isn't looking, I throw the rice on top of the curry and eat it right from the pan.
