Yummy French Onion Soup

What you need: 

4 large sweet onions (or just regular onions), sliced 2 tablespoons margarine 1 teaspoon sugar 1 teaspoon salt 1 teaspoon dried thyme 1/2 tablespoon dried mustard 2-3 tablespoons soy sauce 1/4 cup red wine ( I used Cabernet) 6 cups veggie stock (use a good one!) pepper, to taste

What you do: 

1. Heat margarine in large stockpot over medium heat. Add onions, sugar, and salt. Cook for 1 hour (yes, 1 hour!), stirring frequently. 2. Add thyme, mustard, soy sauce, vegan wine, pepper, and a little more salt. Let vegan wine cook down for a few minutes. 3. Add veggie broth, bring just to a boil, and...its done! Serve with warm vegan french bread.'

this soup was great! multigrain bread and veg. mozzarella cheese, under the broiler for 5 min... DIVINE! thanks for the recipe :)

This was amazing! The only thing I changed was I carmalized the onions with a few cloves of garlic and a bay leaf. I also dusted the onions with unbleached flour after doing the wine reduction. I cooked it for 7-10 mins to cook out the raw flour flavor....I have a ton of leftovers and they get more and more delicious! I recommend using the vegan guernsey cheese recipe, it turned out fantastic!

this did not turn out good for me :( it was too onion-y and i love onions!!! it was also too sweet from what i remembered... i think i eyeballed the sugar but geese... i must have done something wrong... and i used regular brown onions

mmmmm this is soooo good! It is my first shot at making french onion soup. My omni husband and omni dad both got seconds. My veg mom was very excited to taste a veg french onion soup that tastes so good! This will definately be a staple in my household. The only change I made was after cooking the onions on the stovetop I put all ingredients in the slow cooker for several hours. The soup was amazingly rich!

Has anyone made this in a crock pot? I just bought one and I loved this soup and thought it might be good made in a crockpot. Any tips?

I was disappointed this wasn't as good as I was hoping. It was much too salty for my taste. I can't place it, but I just didn't like the taste, it wasn't anything like non-vegan or even vegetarian recipes I used to eat.

I just made this for dinner, omigod delicious! I didn't cook the onions for an hour, maybe twenty minutes. I used "not beef" bouillon cubes for the broth and topped it with thick homemade croutons. I put 3 tablespoons of soy sauce, which I think might have made it a little too salty, next time I'll put less and maybe one less bouillon...but otherwise so good! My husband said it was delicious too!

Can't wait to make it again!

:)This recipe is very good. I had never made French Onion Soup before and my husband and I really liked it. We ate it with wheat and flaxseed flatbread and a salad. I will make it again.

Besides the onions making me cry :'( .. this recipe was yummy! I added a few extra spices just to give it that kick. YUMMY.
