You Decide Easy Pudding Parfaits

What you need: 

2 cups soy milk
1/3 cup cane sugar
2 egg replacers, dry
either 1/3 cup tapioca (if you like tapioca) or 1/4 cup corn starch if you want smooth pudding
pinch salt
afterward Mix 'n Match Options:
1 teaspoon vanilla, almond, or coconut extract
1 tablespoon shredded unsweetened coconut
1 tablespoon cocoa
2 teaspoons maple syrup
1/4 cup fresh berries (raspberries are best!!!)
4 cute separate dishes to layer it in
sliced banana is also good...
cinnamon or nutmeg

What you do: 

In a cold saucepan, whisk together first five ingredients, then let sit for a few minutes.
Turn on burner at medium/high heat and bring to a boil, whisking constantly as to not burn on the bottom. Once mixture has reached boil turn off burner and remove the saucepan from heat. Let stand 5 minutes.
Now for the fun part: Using 3 separate mixing bowls, make three different flavours of your choice (ex. raspberry chocolate almond, coconut, coconut almond, raspberry vanilla, vanilla banana cinnamon nutmeg etc.)
Once thoroughly mixed, layer them in your separate pudding dishes of choice, adding berries or fruit between the layers if you wish. Garnish with anything you like. Enjoy ^^

SO HOW'D IT GO?

This was pretty good.  I think I read the recipe wrong though--I used tapioca starch and the pudding turned out really stringy.  After reading the recipe again, I think I was supposed to use plain tapioca.  If I make this again I will use corn starch.  I topped it with blackberries, cashews, bananas, and maple syrup. 

Whoops, yeah I meant tapioca pearls! Sorry >.<
