Whole Wheat Biscuits

What you need: 

1 cup whole wheat flour
1 cup whole wheat pastry flour
3 tablespoons nutritional yeast
4 teaspoons baking powder
3/4 to 1 teaspoon sea salt
1/2 teaspoon garlic powder
1/3 cup margarine (I use Earth Balance)
1 cup soy milk + 1 teaspoon vinegar

What you do: 

In a medium bowl, mix together dry ingredients.
Cut in margarine with a pastry cutter or a fork until margarine is completely incorporated.
Stir in milk mixture just until blended.
Drop large spoonfuls onto a lightly greased baking sheet.
Bake at 450 degrees Fahrenheit for 12 minutes or until golden.

SO HOW'D IT GO?

These are awesome! Light and fluffy, but with substance (I can't stand most white flour products). I make them with straight Kamut flour, since I have a minor wheat allergy, and my husband and I think they taste better. If using Bob's Red Mill's kamut flour, you will need to cut it down by about 1/4 cup; if using Azure Standard's kamut flour, no modifications are needed.

This were really good.  I only had regular whole wheat flour and about a 1/4 cup of regular all purpose flour, so I thought for sure they would come out kind of tough, but they were great.  Quick to throw together too!
