White Cake

What you need: 

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/4-1/2 teaspoon salt
1 cup water
1/3 cup oil
1 tablespoon mild vinegar
1 tablespoon vanila
1/4 teaspoon almond extract

What you do: 

1. Preheat oven to 350 degrees F. Mix or sift dry ingredients together in a large bowl.
2. Measure in the wet ingredients, and stir with a fork until no lumps remain.
3. Pour into an 8 x 8" pan. No need to grease if you're serving it from the pan. Otherwise, grease and flour pan.
4. Bake for 35 minutes or until tests done.

SO HOW'D IT GO?

so does applesauce in place of the oil make a difference in taste or texure in a white cake? im thinking of just subbing all but 2 tsp or so. thanks in advance!

using all applesauce may make it waaay too dense. it doesnt affect the taste so much, but the texture, yes.

agreed!  super flexible!  everyone loved it the first way i made it but tonight my roommates wanted me to make it again - this time just in cake form.  i still used both baking soda and baking powder and then instead of the almond extract i added about a tbsp of almond butter.  SO GOOD!  then my roomie made a frosting of chocolate/powdered sugar/splash of oj.  it ended up with almost a banana cake taste oddly enough but seriousely - everyone - non vegs included loved this cake!

Katica...can I just say that your cake looks awesome!  My birthday is in April, just thought I'd give you advance notice so you have plenty of time to make a cute cake like that for me.  ;)

i made these into cupcakes and added a tsp of baking powder to make them fluffy, i didn't have any almond extract so i used vanilla for both which i think ended up making the cake a little more yellow-ey than i was wanting but the flavor and texture of these were amazing!! i think better than any non-vegan cake mix that i've ever made anyway. 

**word of warning - do not attempt these without cupcake liners!  i tried and failed miserably.  i thought if i sprayed alot and then floured a little they'd hopefully pop out.  i was wrong. :P  since the bottoms got a little mangled in the process i decided to frost them upside down instead.  i piped a yellow swirl all around the base and bottom and made little beehive cakes and placed them on little circles of tissue paper that i cut out.  they actually are kinda cute. ;)

Really yummy.  I used soy milk instead of water and didn't have any almond extract either.  I topped the cake with Cool Whip (before I knew it wasn't vegn.......... it said non- dairy!) and strawberries.  The whole family loved it.  Especially the kids.  Made it into two layer cake.

i sub'd. in lemon juice and 1 teaspoon apple cider vinegar
this is wayy better the next day, straight from the fridge, with a little lemon drizzle or frosting
my vanilla cake recipe is great for cupcakes/muffins/small pans  so this recipe  is nice because it bakes better in the  larger pans.

Thanks, Beans and Greens! It's actually not shredded coconut, it just looks that way because I used a pastry bag with a star tip to pipe the icing on. :)

Is the top of the cake colored shredded coconut? It is so pretty, too pretty to eat!
