White Cake

What you need: 

1 1/2 cups flour
1 cup sugar
1 teaspoon baking soda
1/4-1/2 teaspoon salt
1 cup water
1/3 cup oil
1 tablespoon mild vinegar
1 tablespoon vanila
1/4 teaspoon almond extract

What you do: 

1. Preheat oven to 350 degrees F. Mix or sift dry ingredients together in a large bowl.
2. Measure in the wet ingredients, and stir with a fork until no lumps remain.
3. Pour into an 8 x 8" pan. No need to grease if you're serving it from the pan. Otherwise, grease and flour pan.
4. Bake for 35 minutes or until tests done.

I made this cake last night & used coconut milk & lemon extract instead, because I wanted a lemon flavored cake. I followed the instructions exactly. It came out horrible, it tasted off, sour, bitter. It was a nasty mess & I threw the whole thing away. I'm glad I tasted it before I frosted it.

I made this cake for my dad for Father's day! I was looking for something close to pound cake. Since I did not see him for the day, my sister and her fiancée delivered it to him. They all raved about it! This is saying something, since they are all picky non-vegans! I think my dad meant it as a compliment when he said "it didn't taste vegan" :p I baked it for way longer than the recipe specified, since I used a loaf pan

I've made this recipe as written before and did not like it.  I made it again, recently, and subbed plain soy milk for all the water and used white wine vinegar.  It was much better that way and it's much better the next day.  You could probably get away with regular white vinegar, but at least use some non-dairy milk instead of water.  It helps it a lot.

This was yummy!!!  I made the cake in two smaller round cake tins and used wholemeal flour.  Then I sandwiched them together with a caramel custard I made out of  soy milk, egg replacer, vegan custard powder and brown sugar.  I stirred some shredded coconut into the caramel, then spread the caramel on the top of one cake and the bottom of the other.  In between the layers I placed thin slices of banana.  I finished off by sprinkling icing sugar on top.  I took this to work and everyone thought it was super yummy and very filling!!!  The only thing was that it didn't rise much but I didn't have a sieve so I couldn't sift the ingredients to aerate it.  Otherwise it was great!  Thanks for a great recipe!!! :)

Oh yes, forgot to add that I was originally going to use the Best Frosting Ever (http://vegweb.com/index.php?topic=22063.0) recipe to frost the outside of the cake, but after it was made I saw it was too thin for my preference so I used it for filling between the layers. I made it with organic blueberry jam and it was delicious! For the outside of the cake I used a basic cream cheese frosting recipe.

I make this cake for my brother's birthday and it turned out great. I think this is the best white cake recipe on here, as most others end up tasting like a pancake.

I didn't change much, just added 3/4 cup sugar rather than a whole cup, used margarine in place of oil, and soy milk in place of water.
And when mixing the wet ingredients, I whipped the sugar and margarine together first then added the rest.

Since I made a 7 layer cake I was able to experiment with adding the vinegar at different times (since someone said it would go flat unless you added it last) and it didn't make a difference.

This will be the recipe I use for my extravagant cakes.

This cake is delicious! I made it for a party and my friends and family had no idea that this was vegan and they loved it.  This recipe is a keeper!

I doubled this recipe, greased and floured two round pans and made a layer cake.  Its so good! I love this white cake!  With a vanilla frosting, it tastes just like the birthday cakes I had when I was a little kid!
