Voodoo Bruschetta
6-8 ripe plum tomatoes, seeded and diced finely
2 tablespoons finely chopped red onion, optional
2-10 cloves garlic, crushed
1/4 cup fresh basil, chopped or 3 tablespoons pesto
2 teaspoons red wine vinegar or lemon juice
1-4 tablespoons olive oil
1-2 teaspoons chili paste
10-20 pitted kalmatta olives, chopped
salt and pepper, to taste
3/4 to 1 pound pizza dough
vegan parmesan, grated, to taste
1. Place tomatoes in bowl. Add onion, garlic, basil or pesto, vinegar or lemon juice, chili paste, olives, salt, and pepper, to taste. Let stand for about 1 hour.
2. Preheat oven to 400 degrees F. Drain liquid from tomato mixture, if desired. Roll out pizza dough into a thin rounded rectangle.
3. Bake pizza dough for 20 minutes, until lightly browned. Spread crust with tomato mixture. Top with the vegan parmesan. Enjoy.
