Bell Pepper Bruschetta

What you need: 

1-2 red bell peppers, thinly sliced
1/4-1/2 medium sized onion, thinly sliced
olive oil, as needed
1 loaf French bread, sliced
2 cloves garlic, minced
5 tablespoons basil
salt and pepper, to taste

What you do: 

1. Preheat oven to 350 degrees F. Place red peppers and onions in a pan with a small amount of olive oil, cook until peppers and onions are tender.
2. Place slices of bread onto a baking sheet and then drizzle oil on them. Spread the minced garlic onto the bread slices, then stick the pan in the oven for 3 minutes, or until very lightly toasted.
3. Remove the pan from the oven, and evenly distribute the onions, peppers, and basil on each slice.
4. Add salt and pepper, to taste. Put the pan in the oven for about 5-10 minutes, or when the bread is nice and toasty (golden brown).

Really good! I didn't have much onion left at all, but I will definitely add more of that and more garlic next time. Hopefully next time there'll be bread in my house (this time I used melba toasts)!

This recipe was awesome! I roasted the red bell pepper and then chopped it up and mixed it in a bowl with a fresh cut tomato, garlic, basil and a little salt and pepper. After cutting up the bread, I drizzled some olive oil on them and put heaping spoonfuls of the mix on top. I also used some veggie provolone cheese on a few to mix up the flavor. Yum!javascript:void(0); I'll have to take a pic next time...before I scarf them down :)


Quick, easy and delicious! We had 1 pepper and 1 tomato, so that it was we used and it came out great. We threw the tomatoes in at the last minute just to warm through and put the garlic in the topping instead of on the bread. It was a great weekend snack, thanks!
