Virtually Fat-free Okara choc-chip cookies
1 cup flour
1 teaspoon baking powder
1/2 cup sugar
1/2 cup desiccated coconut
1/2 cup vegan chocolate chips or chopped vegan cooking chocolate
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup wet okara
2 tablespoons molasses
1 teaspoon vanilla
1. Preheat oven to 350 degress F. (180 C) and grease a cookie tray.
2. In a large bowl, sift the flour, baking powder, salt and cinnamon together, and mix well with other dry ingredients.
3. Add wet ingredients, and mix until just combined.
4. Roll into balls and place onto cookie sheet. Press with a fork. Bake for 10-15 minutes, or until browned.
Okara is the soy bean pulp remaining after making soy milk. We make about ten liters a week in our home, so have mountains of okara in the fridge. This is one of the yummier ways of disposing of it:
