Vegan oatmeal raisin cookies

What you need: 

1 1/2 cups firmly packed brown sugar
1 cup margarine
egg replacer for 2 eggs (http://vegweb.com/index.php?topic=7678.0)
2 teaspoons water
2 teaspoons vanilla extract
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon salt
2 cups quick-cooking oats, uncooked
1 cup raisins or semi sweet chocolate chips

What you do: 

1. Preheat oven to 350 degrees F. Combine brown sugar and margarine in bowl and mix with spoon. Add egg replacer, water and vanilla, and continue mixing.
2. Add all remaining ingredients except oats and raisins. Mix well. Stir in oats and raisins.
2. Drop dough by rounded tablespoonfuls, 2 inches apart, onto cookie sheets. Bake 9-11 minutes or until lightly browned. Let stand 1 minute. Remove from cookie sheets, cool completely.
