Veggie Medley Wrap

What you need: 

1 large ripe avocado
1 medium ripe tomato, diced
1 tablespoon ground black pepper and sea salt
4 large lettuce leaves
1 ounce roasted soy nuts, divided
3 medium fresh white mushrooms, sliced
1 bunch fresh spinach
2 vegan burger patties, optional (I use Gardenburger veggie medley)

What you do: 

1. Mash avocado in a medium bowl until almost smooth. Stir in tomato, along with pepper and salt.
2. If using veggie patties, toast until hot in center, and slice thinly.
3. Lay out lettuce leaves and spread avocado-tomato mixture through the center of each leaf. Sprinkle some soy nuts on each leaf, and begin stacking spinach and mushrooms.
4. Add 1/2 sliced veggie patty per wrap, if using. Roll lettuce leaves around the center mass and enjoy!
