Vegan Turkey Deli Slices
2 cups vital wheat gluten
1 cup vegetarian chicken broth
1/4 cup soy sauce
2 tablespoons olive oil
2 tablespoons agave nectar
1/4 teaspoon mesquite liquid smoke
1/2 cup nutritional yeast flakes
1/2 (14 ounce) package firm tofu
2 teaspoons onion powder
2 teaspoons poultry seasoning
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon turmeric
1. In a large bowl, add the vital wheat gluten. In a food processor, process all the wet ingredients, nutritional yeast, tofu, and spices until smooth.
2. Pour the wet ingredients into the bowl with the wheat gluten. Mix well with a spoon then knead with hands.
3. Roll into a log that is 2 1/2-3" wide. Loosely roll foil around the seitan log and twist both ends like a tootsie roll.
4. Place in a pot with several inches water. Have something holding it from the bottom so it is not touching the water (like a deep cookie cutter).
5. Steam for 1 hour. When done steaming, take out of pot, allow to cool. When cool, slice thinly like deli meat.

SO HOW'D IT GO?
I had a little trouble at first since I don't currently have a food processor. I used the "blend" setting in my blender. The mixture of the wet ingridients and spices looked good at first, but when I mixed it in with the VWG it was a gooey mess. I had my grandma add more VGW as I kneeded the mixture until it was a good loaf consistency. I made three loaf and steemed in my pot...Turned out great! I immideatly browned some slices and made a toasty sourdough melt with some daiya, pickles, and mustard!
its a little chewy but yummmmm
This was great. Easy to prepare and cook, slice and modify. Going to try slicing thin in food processor and adding BBQ or teriyaki sauce. Cooks so quickly and not a messy pot to clean up after. :)>>>

I tried making something similar yesterday but used too much wheat gluten I think. The dough I made was too wet and I had trouble dividing the dough and getting it not to stick to the bowl, my hands and the foil. (Home made sausages from vegandad site) I added more wheat gluten thinking that would help make it more "handleable" and it did but it was too "wheaty" tasting.
Just made this- I halved the recipe, used smoke salt in place of regular salt, and used maple syrup in place of agave. It's been cooling for 20 minute and I just ate a few slices...and it's really good! Very moist!!Totally using this again and again!
;)b Wow! It's tofurky without the preservatives and chemicals. My slices came out great, though after I chilled the loaf in the fridge, the loaf became stretchy and so moist that the slices were somewhat doughy. Hmm. I might try it in the oven next time after steaming it. It formed a nice shiny crust around the outside and at first slice at room temperature, it was a better consistency. Not sure what I did, but oh well. As of now it's a bit stretchy when you bite into it- it follows your mouth out of the sandwich, but the taste is quite good.
What I want to know is, how do you get such perfect slices?

:D Um, this is MAD tasty!! This is my second attempt at making something like this and I must say this was so easy and it came out perfect! Instead of using a pot for the steaming I cut the log in half, wrapped both pieces in foil and put them in the top tray of my rice cooker and steamed them for an hour. Even my meat eating husband said it tasted great and he would eat it on a regular basis. Thanks so much for the recipe!! :)>>>
I really want to try this recipe but I don't have liquid smoke is it that important to the flavor?
Look for liquid smoke near the barbecue sauce at most grocery stores.
This was GREAT! I have been waiting to make this and finally got around to it yesterday. It tastes amazing; my husband liked it too. It is a lot moister than the last recipe I tried. I followed the recipe exactly--super easy and got a great result. Thanks so much! I'll definitely be making this again!
