MMmmm Fat-Free Cheesy Seitan Pierogies

What you need: 

1 cup boiling water
1 tablespoon mame miso
1/4 cup vital wheat gluten
1/4 cup water (room temp)
1 serving (28g) of fat free soy cheese
1/4 cup chopped mushrooms
1/4 cup chopped red pepper
1/4 cup chopped onions
soy sauce, salt & pepper to taste

What you do: 

Add miso to boiling water and dissolve. Cook vegetables (no oil needed) in pan on high heat until dark brown (~10mins). While waiting, combine gluten flour with water to form seitan(rubber ball), kneed for a couple minutes. Chop soy cheese into pieces to fill into seitan pierogies (you can make them long, circular, semi-circular, whatever you like). Use more gluten flour to seal the edges of pierogies if they won't stay together. Place in the boiling water with miso until they pop up to the top (~5mins). Soy cheese will be melted. DO NOT OVERCOOK, or else they won't be soft and juicy but chewy and rubbery. When done, take out of water, place in pan with browned veggies and "fry" for a couple mins on both sides.(Will look nice and browned because of the caramelized onions on the surface of pan). Serve over cooked broccoli.
Sprinkle with salt and pepper to taste or soy sauce for dipping. Can add some nutritional yeast flakes if you like a more cheesy taste and Voila! (This meal is easy, very high in protein and use a non-stick pan!)
