Orange "Beef"

What you need:

2 cups seitan, cut into bite sized chunks
olive oil or cooking spray
1/4 cup orange sauce (I like East-West Zesty Orange Cooking & Dipping Sauce, or recipe below)
1 teaspoon crushed red chiles, optional
1/4 cup water chestnuts, sliced
cooked rice, to serve
orange sauce (if not using bottled):
2 tablespoons cornstarch
2 tablespoons water
1 cup freshly squeezed orange juice (about 2 oranges)
1/2 cup orange marmalade
1 tablespoon orange peel, grated
1 tablespoon chili paste, optional
1 tablespoon vinegar

What you do:

1. If making sauce, mix all sauce ingredients in a bowl. Brown your seitan in a fry pan with olive oil or cooking spray. Once browned, add red chiles and water chestnuts.
2. Take fry pan off heat and add orange sauce to generously coat your seitan, mix around until everything is evenly coated (and sauce thickened, if homemade).
2. Serve with rice, and drizzle more orange sauce on top of your seitan.
*East-West Zesty Orange Cooking & Dipping Sauce: If you can't find this sauce try to find another brand. This brand is very good and is what makes the dish!
