Vegan Chocolate Mousse

What you need:

8 ounces silken tofu, firm (I use Mori Nu), drained
2/3 cup vegan chocolate chips, melted
1/2 cup brown rice syrup

What you do:

1.Place tofu in food processor. Process until smooth. Stir in brown rice syrup to melted chocolate chips. Once chocolate chips and brown rice syrup are mixed well and smooth, remove from heat.
2. Turn on the food processor (with the tofu still in it) and slowly pour the chocolate mixture in until the mousse is very smooth, and everything is mixed well. Place in serving dishes or pie crust and chill.
Tal Ronnen's vegan whipped cream is the perfect compliment to this mousse. As with anything with tofu, this dish gets better the longer it's in the frig. Enjoy!!
Source of recipe: I came up with this recipe based on the ingredients in Whole Foods vegan chocolate mousse. I make this to eat by itself, with homemade vegan whipped cream or put the mousse into a pie crust and serve as pie.
