Toddler-Tested Mommy-Approved Oatmeal Raisin Cookies

What you need: 

1/2 cup vegan margarine
1/2 cup applesauce
1 cup brown sugar
1/4 cup white sugar
2 flax "eggs" (2 Tablespoon flax mixed with 6 Tablespoons warm water)
1 teaspoon vanilla
1 cup whole wheat flour
1/2 cup white flour
1 & 1/4 teaspoons baking soda
1 & 1/2 teaspoons cinnamon
1/2 teaspoon salt
3 cups uncooked oats (quick or old fashioned)
1 cup raisins

What you do: 

1. Preheat oven to 350 degrees.
2. Beat together margarine, applesauce, and sugars until creamy.
3. Add flax "eggs" and vanilla. Beat well.
4. Add combined flour, baking soda, cinnamon, and salt. Mix well.
5. Mix in oats and raisins.
6. Drop rounded spoonfuls of dough onto parchment paper or ungreased cookie sheet.
7. Bake 10-13 minutes. **Do not overcook! They should still feel a little soft on top when you take them out of the oven.**
8. Cool briefly on cookie sheet then move to a wire cooling rack.

SO HOW'D IT GO?

These are really good.  I love that the recipe calls for mostly whole wheat flour.  I was a little short on the oats, but it didn't seem to matter.  Mine came out with a soft/slightly chewy texture, which I like.  They also have a really good flavor...the batter is really tasty.

Mmmm these cookies came out really good! Eating one fresh out of the oven now  :)

I didn't have enough brown sugar so I added a bit of maple syrup instead.

these are THE greatest oatmeal cookies.
all of my friends agree.
I was told that "they're the best cookies I've ever had."
I've made them twice and each time, they came out amazing.

modifications:
I swapped the amounts of whole wheat and white flour (I enjoy the whole wheat taste, but I'm not certain everyone else would).
I also add nutmeg.

This recipe looks great!
I like that there is so much more WW flour and brown sugar than their white couterparts, not just half and half like a lot of recipes.
I would make these right now for my toddler but I don't have any oats.. grrrr!
