Time-Warp Lemon Squares

What you need: 

Crust:
1 cup all-purpose flour
5 tablespoons margarine
1/4 cup granulated sugar

Filling:
3 egg replacers (I use Ener-G Egg Replacer)
3/4 cup granulated sugar
3 tablespoons all-purpose flour
1 teaspoon real vanilla
1/2 teaspoon baking powder
1/8 teaspoon salt
2-3 lemons, zested and juiced

powdered sugar, optional

What you do: 

1. Preheat oven to 350 degrees F. For crust, in a bowl, combine crust ingredients and press into 8 X 8" pan. Bake for 15 minutes.
2. For filling, while crust is baking, beat the egg replacers in a bowl until foamy. Add the remainder of the filling ingredients and mix together. Pour over the crust, and bake 20 minutes more, or until set. Cool.
3. For topping, sift powdered sugar on top, if you'd like, and enjoy the trip down memory lane!
For fancier version, add a layer of vegan cream cheese mixed with a little powdered sugar over the baked crust before you pour in the filling. (You may have to cool the crust a bit before spreading the layer out.)

Amazing  ;)b I made this today for some of my friends and it was very popular. Only i didn't have enough margerine so i used some olive oil instead......

These are superb!  I haven't had lemon squares in two years, and I'm happy.

Used flax for binding.  Looked all brown on top, but set great and tasted great.

Love these, but I agree with some previous reviewers in that they're a little too sweet. It's been so long since I've had lemon bars! :)>>>

hahaha! i just realized where i may have gone awry! in the crust i used 3/4(!) cups sugar instead of 1/4! hence the hard edges.....

i just made these and my non veg family said they were good, but my mom said the filling was a tad to jelly and not "something". hmmm i do think they are done before the center sets fully because i baked mine for 25 minutes and the edges were a bit too crunchy/chewy:) maybe thats why they got too jelly/chewy? i also do agree that the flour seems to rise to the top so the next batch i will try with arrowroot or maybe tapioca flour?
either way, delicious!

Ok, I just made these with very high hopes and they did not turn out! I followed the recipe exactly. When it cooled, it had kind of seperated. On top was a cakey like layer of the flour mixture, and underneath was the lemony goop that just ran all over the pan. I baked it for another 10 minutes and this still didn't help. I am very dissapointed and probably won't attempt this again.  :'(

I just made these again because I couldn't ignore all the good reviews and ......this time it worked! I don't know what i did differently but it actually set up! I had only limes instead of lemons so that is what I used. It is still warm and gooey, but that didn't stop me from devouring two bars already! They will taste even better with the powdered sugar after they cool. For the crust I used only 3 tablespoons of margarine and 2 tablespoons of applesauce. I also had to bake it for 25 minutes.

Well, I'm a newbie, and this is my first VegWeb recipe.All I have to say is,it looks as though I'm off to a great start! These little guys were  delicious.  Nice and lemony,sweet and gooey. They  were so easy to prepare and looked so pretty. Thanks!

I was a little worried about how these bars would turn out because I only has cornstarch as an egg replacer.. which won't froth. But they are actually really very good. I got the craving last week when we h ad some for sale at the coffee shop i work at. Very satisfying.

Did you press the crust into the pan, and bake it 'naked' for the first 15 minutes? It sounds like the crust might not have been compacted enough.

I did. I think I am going to try the recipe from veganomicon and hope that I have better luck.  :winksmile:
