Cherry Almond Oat Bars

What you need: 

1 1/2 cups rolled oats
1/2 cup whole wheat pastry flour
2-3 tablespoons wheat germ, optional
1/4-1/3 cup raw sugar
pinch cinnamon
pinch nutmeg
1/4 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon baking powder
1/4 cup vanilla nondairy milk (I use soy)
2 tablespoons vegan yogurt
2 tablespoons applesauce
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 cup cherries, chopped (I used fresh)

What you do: 

1. Preheat oven to 350 degrees F and spray an 8x8" baking pan. Mix together dry ingredients.
2. In a separate bowl, mix together wet ingredients. Combine with a fork and fold in cherries last.
3. Spread evenly into prepared pan and bake 20-25 minutes. Cool before cutting into squares.
Sometimes I sprinkle chopped almonds over the top before baking, or mix them into the batter. You can also use frozen or dried cherries instead of fresh. Once in a pinch I even used cherry flavored cranberries!

Really enjoyed these.  I used 1 cup frozen cherries and 1/2 cup coarsely chopped almonds.  Went with 1/4 cup sugar and they are very lightly sweet, which is fine with me but if you want a sweeter taste go with the 1/3 cup sugar.  I will make these again and probly try some variations.

How were these? I have a tonne of frozen sour cherries in the freezer that need using!


I am making these right now, I added some chopped walnuts and ground flax seed, I used 1/2 dried cherries and 1/2 dried blueberries.  I cant wait to taste them! I will let you know how they come out.  :D
