Teriyaki Tofu

What you need: 

1/2 cup soy sauce
1/2 cup dry sherry
juice of one lemon
juice of one orange
2 tablespoons sugar
1 tablespoon of grated ginger
2 cloves of garlic, optional
2 tablespoons cornstarch dissolved in 1/2 cup water
1 lb (500 g) firm tofu, cut in 1/2 thick rectangles

What you do: 

Blend soy sauce, sherry, juices, sugar, ginger and garlic in a saucepan. Heat to boiling, stirring constantly. Add cornstarch/water mixture and cook, stirring, until sauce thickens.
Pour teriyaki sauce over tofu pieces and allow to stand for at least 30 minutes. Place on a broiler tray and slide under the broiler until brown and yummy.

SO HOW'D IT GO?

This was very good.  I didn't have any sherry, so I subbed in apple juice.  Worked great.  Delicious!

For main-dish recipes you can also sub an equal amount of ginger ale.

I did a quick google and found this:

"Sherry or Bourbon - Orange or pineapple juices, peach syrup, or non-alcoholic vanilla extract. (Substitute equal amount of liquid 1 to 2 teaspoons vanilla extract.)"

this sounds great but is there anything I can sub for the sherry?

This was very good.  I intended to put garlic in it but forgot and it still turned out fine.  It wasn't as spicy as things I usually make.  For my DH if it's very spicy it increasing the likelihood that he'll eat it.  He did say this is a "keeper" and he wants me to make it again sometime.
