Lemon-glazed Tofu
1 (14 ounce) block extra firm tofu, drained and pressed
1 tablespoon soy sauce
1 tablespoon lemon juice
1 tablespoon olive oil
1/2-1 teaspoon sugar (I used agave nectar)
1 tablespoon dijon mustard (I used yellow)
1 teaspoon Italian herb blend (basil, thyme, rosemary, oregano)
salt and pepper, to taste
1. Cut tofu into strips or cubes. Whisk together all other ingredients. Put mixture in a shallow pan or zip-lock bag, and add tofu to coat well.
2. Allow tofu to marinate for 1 hour+ (the longer the better), turning to coat well with marinade. (I couldn't last the whole hour!)
3. Preheat oven to 375 degrees F. Put tofu and marinade in a baking dish, and bake for 25-30 minutes, turning halfway through. Pour extra marinade over the tofu, as needed. Add salt and pepper, to taste.

Tofu is my favorite dish and I have been thinking about a new Tofu variety for the evening. Since I have been relying on this website for all those cool recipes I was sure about finding a good variety here.
