Tofu Loaf

What you need: 

1 lb firm tofu
1 can vegan black bean and salsa dip
1 onion
1/2 cup quick cooking oats
vegan tofu yoghurt

What you do: 

Combine tofu, onion, black bean dip and oats in a food processor. place in a 9 by 13 in. cooking pan that has been sprayed with non - stick cooking spray. Cover with aluminum foil and cook for 1 hour at around 350 degrees F. Serve with tofu yoghurt, any kind tastes fine.
*If you can't find the dip, try regular instant black bean mix with 1/3c. salsa. You can also add corn kernels and whole black beans if you like.

SO HOW'D IT GO?

nOT TOO THRILLED AT HOW THIS CAME OUT. I ADDED A BIT MORE SALSA AND OATMEAL BECAUSE IT JUST DIDN'T SEEM TO BE THE RIGHT CONSISTENCY. i BAKED IT AT 350 FOR 2 HOURS AND IT WAS STILL MUSHY ON TOP AND IN THE MIDDLE WHILE THE BOTTOM AND SIDES WERE SO CRISPY THAT IF I WOULD HAVE LEFT IT IN THERE ANY LONGER THEY WOULD HAVE BEEN BURNT. I ENDED UP CUTTING IT INTO SLICES AND PUTTING ON A CAST IRON SKILLET TO BROWN IT UP AND COOK IT IN THE MIDDLE. FLAVOR WAS PRETTY GOOD THOUGH.
