Surprisingly Delicious Potato Pasta Melt

What you need: 

1 large or 2 small baking potatoes
3 tablespoons vegan sour cream
1/4 medium onion
1 crushed clove of garlic
1/2 cup elbow pasta, cooked
1 cup marinara sauce
3/4 cup broccoli florets
3/4 cup cauliflower florets
a few strips of soy cheese
herbs to taste: basil, oregano, fennel, parsley, whatever
1 tablespoon margarine (optional)

What you do: 

Quarter potatoes and boil in a little water for 20 minutes (don't burn). Meanwhile, mince onion & garlic in a food processor, cook pasta, and steam broccoli & cauliflower for 4 minutes.
Gently heat marinara sauce & herbs. When potatoes are cooked, drain them and pulverize them with the onions in the food processor. Add sour cream and 1 tablespoon of vegan margarine (optional). When blended, spread mash at the bottom of a small casserole dish. Layer on vegetables, pasta, sauce, and cheese. Bake at 400 degrees for 10 minutes.
