Something that Tastes Good

What you need: 

5 cloves garlic, minced or pressed
1-inch piece of ginger, grated
peanut oil for sauteing
1/2 medium onion, chopped
1 stalk celery, sliced
2 teaspoon curry powder
1/2 teaspoon ground cumin
1 small sweet potato, peeled and diced
juice of 1 lime
1 teaspoon sweetner of choice
1-2 teaspoon peanut butter
1/2 green bell pepper, diced

What you do: 

Saute garlic and ginger in peanut oil on medium heat until you begin to smell the ginger and the garlic becomes browned.
Add the onion, celery, and spices and continue to cook, covered, until the onions are tender, adding liquid to prevent burning.
Add sweet potatoes and water to cover and simmer on low heat for about 15 minutes, or until the sweet potatoes are soft.
While the sweet potatoes are cooking, blend the lime juice, sweetner, and peanut butter. When the sweet potatoes are tender, add the peanut sauce and mix well. Add bell peppers and continue to simmer, covered, for another 10 minutes.
Note: I just made this up for lunch today. It wasn't hot enough for me, so I'd add one of those little green chiles. I thought this was pretty darned good for the first run, but any suggestions would be appreciated. Thanks!
