Roasted Beets

What you need: 

I'm very excited about these beets. I'm just feeling my way around mostly vegan cooking and changing my lifestyle but since the holdiays are coming I'm getting very anxious and thought I'd try out some new dishes, this was dish #1

The Beets

  • >2 pounds red beets, medium sized, scrubbed clean, green tops removed
  • >Olive oil
  • >Salt

Balsamic Glaze

  • >1/2 cup balsamic vinegar
  • >2 teaspoons sugar
  • >1 teaspoon grated orange zest
  • >Pepper to taste

 

 

What you do: 

Preheat oven to 400°F. Line a roasting pan with aluminum foil. Place the beets in the pan. Rub olive oil over the beets, and sprinkle with salt. Cover the beets with another sheet of aluminum foil.

Roast for 1 hours, then test every fifteen minutes by poking a beet with the tines of a fork. Once the fork tines go in easily, the beets are cooked. Pull them out and let them cool for a few minutes.

While the beets are cooling, prepare the balsamic glaze. In a small, shallow sauté pan, add the balsamic vinegar and sugar. Heat on high until the vinegar has reduced to a syrup consistency. Remove from heat

I use a paper towel to wipe of the skin while the beets are still warm, it should come right off. You can chop up your beets, I prefer big pieces. Then toss your beets in the glaze and grate the orange to taste, I like a lot!
