Peppermint Chocolate Chip Cookies

What you need: 

1/2 cup sugar
1/2 cup brown sugar
2/3 cup canola oil
1/4 cup applesauce (or 1 egg substitute)
2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups crushed peppermint candy (I use peppermint sticks)
1 1/2 cups vegan semi-sweet chocolate chips

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. Mix sugar, brown sugar, oil, and egg replacer in a large bowl.
2. Mix flour, baking soda, and salt in another bowl. Add dry ingredients to wet. Add chocolate chips and crushed peppermint.
3. Drop on ungreased cookie sheet. Bake in the oven for about 8-10 minutes. Keep an eye on these because sometimes the peppermint will seep and burn on the pan.
I recommend not using any type of vegetable shortening for these cookies. They will turn out dull and flat.

i am never going to make this recipe again. i ate nearly the whole batch by myself.

SecondBase, I think the secret is to make them with an audience or competition of some sort, so that the sugar-headache gets shared around. (-:

Very, very VERY good. I used 1 1/2 tsp of peppermint oil instead of candy, and used 1/2 cup applesauce for an egg replacer. I think I ate five or six right after they came out of the oven.

Actually I forgot to mention that I did make one other change - I used 1/3 cup canola oil and subbed another 1/3 cup of applesauce. They came out great! I also had to up the cooking time a bit - I think I did them for about 15 minutes.

O.M.G. these cookies are GOOOOOOOOD!! Only changes I made were to use 1 cup turbinado sugar, and 1 box of peppermint candy canes. These cookies are as good as any non-vegan cookie you will find. I used Ghirardelli semi-sweet chocolate chips. Simply amazing!

i just have to say... im on my 3rd batch of these cookies... they are by far my favorite cookies ever!!! watch out... they are addictive!!!!!!!!!

i made them with 1/2 apple sauce 1/2 oil and they turned out really nicely.  that food processor is a good idea! ha ha... if only i would have thought of that sooner!

alright, so i just went and bought the brown sugar. i had alot of trouble getting these to stay together so ended up adding a bit of water which made them a bit sticky. they're pretty good though, but i think just for personal preference, i'll use less of the chocolate chips next time and bit more mint. other than that mmmm mmmmm good.

I highly recommend these cookies!  They are lovely.  I used applesauce as my egg replacer and it was plenty juicy.  I used waaaay less candy than called for.  The whole amount called for would have been overwhelming in my opinion.    I used about a third cup and as my boyfriend has been saying, "These are a perfect blend of chocolate and mint, it's good becase it makes you want more of it."  He ate 5 and he never likes mint things!!! Yum!
