Pasta Fazul

What you need: 

1 - 14 ounce can diced tomatoes
1 - 14 ounce can navy, cannelini or similar beans
1 cup ditalini or elbows pasta
1 large onion, sliced into thin strips
1 to 2 tablespoons canola or coconut oil
Fresh or dried basil, as desired
Salt and pepper, to taste

What you do: 

You will need 2 medium pots. One for cooking the pasta and one for the sauce.
1) Brown the onion in oil over medium heat. This will take 10 minutes or so. Stir every minute to avoid burning the onion. This is where the sweet flavor comes from.
2) Once the onion is browned and smelling good add the tomatoes and beans, mashing up about 1/4 to half the beans if desired to make the sauce creamy. Add basil, salt and pepper then reduce heat and simmer for 30 minutes.
3) Cook pasta according to directions. Drain. Add to the pot of sauce stir and set aside for a few minutes.

Mmmmmm! My personal tastes tell me to go for olive oil instead and add a few good cloves of garlic. When in season I'll be using fresh tomatoes.  :)

You should try it with just onion first, then try it with garlic. olive oil is great too!!!  Because the browning of the onion takes quite a while it would burn the garlic and be not so good, so if you put garlic do it after the onion is fully browned.  ENJOY
