Oatmeal Pancakes

What you need: 

1 cup cooked oatmeal (steel cut is best)
1 cup whole wheat or 50/50 flour
1/2 package yeast

What you do: 

Mix the yeast with 1/4 cup warm water and proof it. Add the cooked oatmeal and flour. Mix in enough water to make a pancake batter. Leave it out overnight and bake on a preheated griddle in the morning.
These are *wonderful* with crushed fresh strawberries.
