My Grandmothers Haystacks (Vegan-ified!)

What you need: 

2-1/2 cups rolled oats
1 cup sweetened coconut
6 tablespoons Cocoa
1/2 teaspoon vanilla
1/8 teaspoon (pinch) salt
1 cup brown sugar
1 cup granulated sugar
1/2 cup vegetable shortening
1/2 cup plain non-dairy milk (I use regular soymilk)
1 tablespoon vegan margarine

What you do: 

1. In a bowl, mix together cocoa, vanilla, rolled oats, coconut and salt in a large mixing bowl (preferably not plastic). Set aside.
2. In a medium pot, combine brown sugar, granulated sugar, shortening, non-dairy milk, and vegan margarine. Melt on medium high, stirring constantly. Once mixture begins to boil, stir for 60 seconds longer, then remove from heat.
3. Mix the wet and dry ingredients together. Using a spoon, drop scoops onto wax paper (whatever size you'd like!) and let cool until they become firm. (It's important to use the proper amount of wet and dry ingredients or else they may not set and will stay mushy.)
These are the only cookies I really like, so I hope you enjoy them!
